I first became hooked on chia seed pudding back in my University days. I was always rushed in the morning and never had time for breakfast at home, so I would bring it with me to my early morning classes. Now, it makes the perfect breakfast to take to work in the mornings because not only is it creamy and delicious, but it’s also really filling and a great way to start the day.

It takes only 5 minutes to throw the ingredients together in a mason jar, shake them up, and then let them sit overnight to thicken up into a delicious pudding. I typically use homemade almond milk, cashew milk, or coconut milk to make this recipe, but you could use any of your favourite plant-based milks. I usually use unsweetened milk and then sweeten the pudding with a bit of maple syrup, but you could also use honey or stevia to sweeten it.
Not only is it an awesome breakfast recipe, but it’s also great as a midday snack or you could add some cacao powder to make it into a delicious dessert. I usually top mine with homemade muesli or granola and fresh fruit. You can also top it with some bee pollen, gogi berries, or other superfoods to make it even more nutritious!
Chia seeds are good for so many things! Even though they’re tiny, they’re a superfood packed full of important nutrients. They are also an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fibre, iron, and calcium.


Chia Seed Pudding
Ingredients
- 1 cup almond milk, cashew milk, or coconut milk
- 1/2 cup plain yogurt
- 1/4 cup chia seeds
- 2 tbsp maple syrup
- 1 tsp vanilla optional
Instructions
- In a mason jar, mix together milk, yogurt, chia seeds, maple syrup, and vanilla. Shake well to combine.
- Let sit in the fridge for at least 3 hours or overnight.
- Divide into bowls and top with fresh fruit and granola. Enjoy!
